Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

Ingredients
  

1 pound ground beef

4 medium potatoes, diced

1 large onion, chopped

2 cups mixed vegetables (carrots, corn, peas - fresh or frozen)

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes.

      Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain excess fat if necessary.

        Stir in the garlic powder, onion powder, salt, and pepper. Mix well to combine.

          In a large mixing bowl, combine the diced potatoes, mixed vegetables, cream of mushroom soup, beef broth, and the cooked beef mixture. Stir until all ingredients are well combined.

            Transfer the mixture to a greased 9x13-inch baking dish. Spread it out evenly.

              Cover with foil and bake in the preheated oven for 30 minutes.

                After 30 minutes, remove the foil and sprinkle shredded cheddar cheese on top. Return to the oven uncovered for an additional 15-20 minutes, or until the cheese is melted and bubbly and the potatoes are tender.

                  Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
