1 lb (450g) baby carrots, peeled and trimmed

3 tablespoons unsalted butter, melted

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

    In a large bowl, mix the melted butter, honey, minced garlic, and thyme. Add salt and pepper to taste.

      Add the peeled baby carrots to the bowl and toss them until they are well coated in the honey garlic butter mixture.

        Spread the coated carrots in a single layer on the prepared baking sheet.

          Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the carrots are tender and caramelized at the edges.

            Once done, remove from the oven and sprinkle with fresh parsley before serving.
