1 cup apple cider

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

¼ tsp ground nutmeg

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

⅓ cup unsalted butter, melted

½ cup whole milk

1 tsp vanilla extract

¼ cup granulated sugar (for coating)

1 tsp ground cinnamon (for coating)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a donut pan.

    In a small saucepan, bring the apple cider to a boil over medium heat. Reduce heat to low and let it simmer until it reduces to about ½ cup, approximately 10-15 minutes. Remove from heat and let it cool slightly.

      In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

        In another bowl, combine the granulated sugar, brown sugar, and eggs, beating until light and fluffy.

          Add the melted butter, reduced apple cider, milk, and vanilla extract to the sugar mixture. Mix until well combined.

            Gradually add the dry ingredients to the wet mixture, stirring gently until just incorporated. Do not overmix.

              Spoon the batter into the prepared donut pan, filling each mold about halfway full.

                Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center comes out clean.

                  While the donuts are baking, combine the granulated sugar and cinnamon in a small bowl for coating.

                    Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack. While still warm, generously coat each donut in the cinnamon-sugar mixture.

                      Serve warm and enjoy!
