1 tbsp baking powder

1/3 cup vegetable oil

1/2 cup unsweetened applesauce

2 large eggs

1 tsp vanilla extract

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

1/2 cup chopped nuts (optional, pecans or walnuts work well)

1/2 cup brown sugar (for topping)

1 tsp cinnamon (for topping)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a standard muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg until evenly combined.

      Combine Wet Ingredients: In a separate bowl, mix the vegetable oil, applesauce, eggs, and vanilla extract until smooth and blended.
