Jamaican Shrimp Pasta: A Creamy Delight

8 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 tsp jerk seasoning (adjust to taste)

1 cup coconut milk

1/2 cup heavy cream

1 tbsp lime juice

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Grated Parmesan cheese (for serving, optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp and season with salt, pepper, and jerk seasoning. Cook until the shrimp turns pink and is cooked through (about 2-3 minutes per side). Remove from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the diced onion, garlic, and sliced bell pepper. Sauté for about 5 minutes until the vegetables are tender.

        Combine Ingredients: Pour in the coconut milk and heavy cream, stirring to combine. Bring to a simmer, allowing the sauce to thicken slightly (about 3-5 minutes). If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is achieved.

          Mix in the Shrimp and Pasta: Add the cooked shrimp back to the skillet along with the lime juice and cooked pasta. Toss everything together until well combined and heated through.

            Garnish and Serve: Stir in the chopped cilantro and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese if desired.
