Korean BBQ Meatballs with Spicy Mayo Dip

1 lb ground beef or ground pork

1/2 cup breadcrumbs (preferably Panko)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons brown sugar

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (adjust for spice level)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons Sriracha (or more to taste)

1 teaspoon lime juice

1 teaspoon honey

1 teaspoon sesame seeds (for garnish)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

    Mix Meatball Ingredients: In a large bowl, combine the ground beef or pork, breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, brown sugar, sesame oil, black pepper, and red pepper flakes. Mix well until all ingredients are evenly incorporated.

      Shape Meatballs: Use your hands to form the mixture into bite-sized meatballs, about 1 inch in diameter. Place the formed meatballs onto the prepared baking sheet, making sure there’s space between each.

        Bake Meatballs: Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and slightly browned on the outside.

          Prepare Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, mix together the mayonnaise, Sriracha, lime juice, and honey until well combined. Adjust the Sriracha to your preferred spice level.
