Ingredients

1 pound ground beef (80/20 blend)

1 tablespoon vegetable oil

4 cloves garlic, minced

1 small onion, diced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 cup green onions, chopped (white and green parts separated)

1 cup carrots, shredded

1 teaspoon sesame seeds, toasted

Cooked rice (white or brown)

Optional toppings: kimchi, cucumber slices, fried egg

Instructions

Prepare the Ingredients: Gather all ingredients and finely chop/mince as needed. Prepare your rice according to package instructions.

Cook the Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add minced garlic and grated ginger, cooking for an additional minute until fragrant.

Brown the Meat: Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain any excess fat.

Flavor the Beef: Stir in the soy sauce, brown sugar, sesame oil, gochujang, and the white parts of the green onions. Mix well and let it simmer for 2-3 minutes to combine the flavors.

Add Carrots: Fold in the shredded carrots and cook for another 2 minutes until they are slightly softened and well-combined with the beef mixture.

Serve the Bowl: Divide the cooked rice into bowls and top with the Korean ground beef mixture. Garnish with chopped green parts of green onions and sprinkle with toasted sesame seeds.

Optional Add-ons: For an extra kick, add a side of kimchi and consider topping with cucumber slices or a fried egg for added richness.
