Ingredients
  

8 oz whole wheat pasta (fusilli or penne preferred)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, torn

1/4 cup olives (black or green), pitted and sliced

1/4 cup nutritional yeast (for a cheesy flavor)

1/4 cup sunflower seeds or walnuts (for crunch)

For the Lemon Basil Dressing:

Juice of 2 large lemons

Zest of 1 lemon

1/4 cup extra virgin olive oil

1 clove garlic, minced

Salt and pepper to taste

1 tsp maple syrup or agave (optional for sweetness)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, salt, pepper, and maple syrup (if using). Adjust seasoning to your taste.

      Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, olives, torn basil leaves, nutritional yeast, and sunflower seeds or walnuts.

        Add the Dressing: Pour the lemon basil dressing over the pasta salad and toss gently to combine all ingredients thoroughly.

          Chill and Serve: Refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature, garnished with additional basil leaves if desired.
