6 large eggs

1 cup egg whites

1 cup cooked and crumbled turkey sausage or chicken sausage

1 cup black beans, rinsed and drained

1 cup diced bell peppers (red, green, or yellow)

½ cup diced onions

1 cup shredded low-fat cheese (cheddar or Mexican blend)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Whole wheat tortillas (6 medium)

Fresh cilantro for garnish (optional)

Salsa or hot sauce for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large sheet pan (18x13 inch) with parchment paper or lightly grease it to prevent sticking.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, egg whites, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

      Sauté the Vegetables: In a skillet over medium heat, add a splash of cooking spray or a small amount of olive oil. Add the diced onions and bell peppers, sautéing until softened (about 3-5 minutes).

        Combine Ingredients: In the large bowl with the egg mixture, add the sautéed vegetables, cooked turkey or chicken sausage, and black beans. Stir in the shredded cheese, ensuring everything is well mixed.

          Spread on Sheet Pan: Pour the egg mixture onto the prepared sheet pan, spreading it evenly to ensure even cooking.

            Bake: Place the sheet pan in the preheated oven and bake for 20-25 minutes or until the eggs are set and lightly golden.

              Cool and Slice: Once cooked, remove the sheet pan from the oven and allow it to cool for a few minutes. Cut the egg mixture into squares (about 6-8 depending on your desired serving size).
