2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

½ teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ cup sun-dried tomatoes, chopped

1 cup spinach, fresh

8 oz pasta (penne or fettuccine)

½ cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Prepare the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and allow to rest.

      Make the Sauce: In the same skillet, add minced garlic and red pepper flakes (if using), sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Add Italian seasoning and sun-dried tomatoes, bringing the mixture to a gentle simmer.

        Add the Spinach: Slowly stir in the fresh spinach and cook until wilted. Mix in the grated Parmesan cheese, allowing it to melt and thicken the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
