2 chicken breasts (boneless and skinless)

2 tablespoons olive oil

4 cloves garlic (minced)

1 teaspoon fresh ginger (grated)

1 cup low-sodium chicken broth

1 cup coconut milk

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

4 servings ramen noodles

2 cups baby spinach

1 cup sliced mushrooms

1 red bell pepper (sliced thin)

2 green onions (sliced for garnish)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Chili flakes (optional for heat)

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat half of the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest before slicing it into thin strips.

    Make the Broth: In the same skillet, add the remaining olive oil and sauté the minced garlic and grated ginger for about 1-2 minutes, until fragrant. Pour in the chicken broth, coconut milk, soy sauce, fish sauce, brown sugar, and lime juice. Stir to combine and bring the mixture to a simmer.
