1 can (20 oz) crushed pineapple, drained (reserve juice)

1 cup heavy whipping cream

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers (plus extra for topping)

1/2 cup unsweetened shredded coconut (optional)

Maraschino cherries for garnish

Prepare the Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, mixing until fully combined.

    Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

      Add Pineapple: Fold in the drained crushed pineapple and vanilla extract to the cream mixture. If you like, you can also mix in the shredded coconut for added flavor.

        Layer the Dessert: In a serving dish or individual cups, start with a layer of crushed graham crackers, followed by a layer of the pineapple cream mixture. Repeat the layers until all ingredients are used, finishing with a layer of the cream mixture on top.
