One Skillet Salmon with Lemon Orzo

Ingredients
  

2 salmon fillets (6 ounces each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 tablespoon olive oil

2 tablespoons unsalted butter

1 medium shallot, minced

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 cup fresh spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions
 

Prep the Salmon: Season the salmon fillets with salt and pepper on both sides. Set aside.

    Cook the Orzo: In a large skillet over medium heat, heat the olive oil. Add the minced shallot and garlic, sautéing for 2-3 minutes until fragrant and translucent.

      Combine Orzo and Broth: Add the orzo to the skillet and toast it lightly for about 1-2 minutes, stirring frequently. Then, pour in the broth and bring it to a boil.

        Simmer the Orzo: Once boiling, reduce the heat to low and cover the skillet. Let it simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.

          Add Flavor: When the orzo is almost done, stir in the lemon zest, lemon juice, and butter. Mix well to incorporate.

            Cook the Salmon: Push the orzo to the sides of the skillet to create space in the center. Gently place the salmon fillets skin-side down into the skillet. Cover and cook for an additional 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Add Spinach: In the last minute of cooking, stir in the fresh spinach, allowing it to wilt into the orzo.
