One Skillet Salmon with Lemon Orzo

Ingredients
  

4 skin-on salmon fillets (about 6 oz each)

1 cup orzo pasta

3 cups low-sodium chicken or vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped, for garnish

1/2 cup feta cheese, crumbled (optional)

Instructions
 

Sear the Salmon: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Season the salmon fillets with salt and pepper. Once the oil is hot, place the salmon skin-side down in the skillet. Cook for about 4-5 minutes, until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes. Remove the salmon from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.

      Prepare the Orzo: Add the orzo to the skillet and stir well to coat in the onion and garlic mixture. Pour in the chicken or vegetable broth, dried oregano, lemon zest, salt, and pepper. Bring the mixture to a boil, then reduce heat to medium-low and let it simmer for about 10 minutes, stirring occasionally, until the orzo is cooked al dente and the liquid is mostly absorbed.

        Add Cherry Tomatoes: Stir in the cherry tomatoes, and cook for an additional 2 minutes until they soften.

          Combine Salmon and Finish: Return the salmon fillets to the skillet, spooning some of the orzo and tomatoes over the top. Drizzle the lemon juice over everything. Let everything heat together for a couple more minutes.

            Serve: Garnish with fresh parsley and crumbled feta cheese (if using). Serve warm, with additional lemon wedges on the side for extra zing.
