1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 large red bell pepper, sliced into strips

1 large green bell pepper, sliced into strips

1 large onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon black pepper

1 teaspoon crushed red pepper flakes (optional)

1 tablespoon oyster sauce

1 tablespoon rice vinegar

2 green onions, chopped (for garnish)

Cooked white rice, for serving

Instructions
 

Marinate the Steak: In a medium bowl, combine the sliced flank steak, soy sauce, cornstarch, and black pepper. Mix well to coat the meat, then let it marinate for at least 15-20 minutes while you prep the vegetables.

    Sauté the Vegetables: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced onions and bell peppers, and stir-fry for about 5-7 minutes, or until they are tender-crisp. Add minced garlic and ginger, and cook for another 1-2 minutes until fragrant. Transfer the cooked vegetables to a plate and set aside.

      Cook the Steak: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Once hot, add the marinated flank steak to the pan in a single layer (do this in batches if necessary to avoid overcrowding). Cook for 2-3 minutes on one side, then flip and cook for another 2 minutes until browned and cooked to your desired doneness.

        Combine Everything: Return the sautéed vegetables to the skillet with the steak. Stir in the oyster sauce, rice vinegar, and crushed red pepper flakes (if using). Cook everything together for another 2-3 minutes until heated through and well combined.

          Serve: Serve the sizzling pepper steak over cooked white rice, and garnish with chopped green onions for a fresh touch.
