Peruvian Grilled Chicken with Creamy Green Sauce

For the Chicken:

4 boneless, skinless chicken breasts

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 2 limes

1/4 cup olive oil

1 tablespoon soy sauce (optional for extra flavor)

For the Creamy Green Sauce:

1 cup fresh cilantro, packed

1/2 cup mayonnaise

1/4 cup sour cream

1 clove garlic, minced

1 small jalapeño, seeds removed for less heat (adjust to taste)

Juice of 1 lime

Salt to taste

Water to adjust consistency (if needed)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine minced garlic, ground cumin, paprika, oregano, salt, black pepper, lime juice, olive oil, and soy sauce (if using).

      - Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

        Prepare the Creamy Green Sauce:

          - In a food processor or blender, combine cilantro, mayonnaise, sour cream, minced garlic, jalapeño, lime juice, and a pinch of salt.

            - Blend until smooth. If the sauce is too thick, add water, one tablespoon at a time, to reach your desired consistency. Adjust salt to taste and set aside.

              Grill the Chicken:

                - Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.

                  - Grill the chicken for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

                    Serve:

                      - Once grilled, remove the chicken from the grill and let it rest for about 5 minutes.

                        - Slice the chicken and serve with the creamy green sauce drizzled on top or on the side for dipping. You can accompany it with rice, grilled vegetables, or a fresh salad.
