1 large fresh pineapple, peeled, cored, and sliced into ½-inch rounds

2 cups granulated sugar

½ cup apple cider vinegar

1 cup water

2 tablespoons grated fresh ginger

½ teaspoon ground cinnamon

½ teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust based on heat preference)

1 teaspoon vanilla extract

1/4 teaspoon salt

½ cup chopped pecans (optional for garnish)

Instructions
 

Begin by preparing the pineapple. Cut it into rings and then slice each ring into small, bite-sized pieces or wedges, ensuring they are approximately uniform in size for even candying.

    In a large saucepan, combine the granulated sugar, apple cider vinegar, water, grated ginger, ground cinnamon, smoked paprika, cayenne pepper, vanilla extract, and salt. Stir over medium heat until the sugar dissolves completely, forming a syrup.

      Add the pineapple pieces to the syrup, making sure they are fully submerged. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook for about 45 minutes to 1 hour, stirring occasionally. The pineapple should soften and take on the syrupy glaze.

        Once the pineapple is tender and fragrant, use a slotted spoon to transfer the pieces to a clean jar or container. Reserve the syrup in the saucepan for further use.

          Allow the pineapple to cool completely before sealing the jar. For best results, let the candy sit for at least 24 hours at room temperature for the flavors to deepen and intensify.

            If desired, drizzle the reserved syrup over the cooled pineapple or use it as a topping for tacos, ice cream, or savory dishes.

              For an added crunch, sprinkle with chopped pecans before serving or storing.
