2 cups cooked chicken breast, shredded

1 cup black beans, rinsed and drained

1 cup sweet corn, canned or frozen

1 red bell pepper, diced

1 avocado, diced

½ cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 cup romaine lettuce, chopped

½ cup cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Tortilla strips or crushed tortilla chips for topping (optional)

Dressing: ½ cup Greek yogurt mixed with 1 tablespoon taco seasoning (optional)

Instructions
 

Prepare the Dressing: In a small bowl, combine the Greek yogurt with taco seasoning, mix well, and set aside (if using).
