2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, diced

1/4 cup soy sauce

2 tbsp mirin (Japanese sweet rice wine)

1 tbsp sesame oil

2 tbsp vegetable oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, corn)

2 green onions, sliced

2 large eggs, beaten

1 tbsp BBQ sauce (preferably Japanese style)

1 tsp ginger, grated

Sesame seeds for garnish

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine the diced chicken with soy sauce, mirin, and ginger. Allow it to marinate for at least 15 minutes.

    Prepare the Rice: If using freshly cooked rice, spread it out on a tray to cool and prevent clumping. Day-old rice works best for this recipe.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and sauté until cooked through and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.
