This easy recipe is not only delicious but also quick to prepare, taking just 40 minutes from start to finish. Perfect for busy weeknights or a weekend gathering. Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

2 cups broccoli florets

2 cups bell peppers (mixed colors, sliced)

1 cup red onion (sliced)

1 cup baby carrots (cut in half lengthwise)

3 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper for easy clean-up.

    In a large bowl, combine the broccoli, bell peppers, red onion, and baby carrots.

      Drizzle the vegetables with olive oil and sprinkle with garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Toss until well combined and the veggies are coated.

        Slice the Italian sausages into thirds or leave them whole, depending on your preference, and nestle them among the vegetables on the sheet pan.

          Spread the mixture evenly across the pan. Make sure nothing is overcrowded for even cooking.

            Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and the sausages are cooked through, turning the veggies halfway through to ensure they're evenly roasted.

              Once done, remove from the oven and let it cool slightly before garnishing with fresh parsley if desired.
