Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp ground cumin

Salt and pepper to taste

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

2 tbsp mayonnaise

Juice of 1 lime

1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

For the Bowls:

2 cups cooked rice (white, brown, or cauliflower rice)

1 large avocado, sliced

Lime wedges for serving

Fresh cilantro for garnish

Instructions
 

Prepare the Shrimp:

    - In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and pepper.

      - Add shrimp to the mixture, tossing to coat evenly. Let it marinate for about 15 minutes.

        Make the Mango Salsa:

          - In a medium bowl, combine diced mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste. Stir gently and set aside.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper until smooth. Adjust seasoning as needed. Set aside.

                Cook the Shrimp:

                  - Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

                    Assemble the Bowls:

                      - In serving bowls, layer the cooked rice as the base. Top with sautéed shrimp, slices of avocado, mango salsa, and a drizzle of lime-chili sauce.

                        Garnish and Serve:
