Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

1 lb shrimp, peeled and deveined

1 ripe avocado, diced

1 cup cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1 cup black beans, drained and rinsed

1 lime, juiced

1 tsp chili powder

Salt and pepper, to taste

Fresh cilantro, for garnish

For the Mango Salsa:

1 ripe mango, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/2 red bell pepper, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt

1 tbsp lime juice

1 tsp chili powder

1/2 tsp garlic powder

Salt, to taste

Instructions
 

Prepare the Mango Salsa: In a medium bowl, combine mango, red onion, jalapeño, red bell pepper, cilantro, lime juice, and salt. Toss gently and set aside to allow the flavors to meld.

    Season the Shrimp: In a bowl, toss the shrimp with lime juice, chili powder, salt, and pepper. Let it marinate for about 10 minutes.

      Cook the Shrimp: Heat a skillet over medium-high heat and add a splash of olive oil. Add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until they are pink and cooked through. Remove from heat.

        Prepare the Lime-Chili Sauce: In a small bowl, mix Greek yogurt, lime juice, chili powder, garlic powder, and salt until smooth. Adjust seasoning if necessary.
