1 lb (450g) flank steak, thinly sliced against the grain

1 tablespoon cornstarch

2 tablespoons soy sauce

2 tablespoons vegetable oil

1 large onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon oyster sauce

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine or brown rice, for serving

Green onions and sesame seeds for garnish

Marinate the Steak: In a bowl, combine the sliced flank steak, cornstarch, and soy sauce. Mix well to coat the steak evenly. Let it marinate for about 20 minutes.

    Prepare the Vegetables: While the steak is marinating, prep the onions and peppers. Slice them into thin strips to ensure they cook quickly and evenly.

      Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

        Cook the Steak: Add the marinated steak to the hot skillet in a single layer. Sear for about 2-3 minutes without stirring, then flip and cook for another 2 minutes until browned but not fully cooked. Remove the steak from the skillet and set aside.

          Sauté the Vegetables: In the same skillet, add a little more oil if necessary. Stir in the sliced onions and cook for 2 minutes until they start to soften. Then, add the sliced bell peppers, garlic, and ginger. Sauté for another 3-4 minutes until the vegetables are tender-crisp.

            Combine Everything: Return the cooked steak to the skillet along with any juices. Add the oyster sauce and sesame oil, stirring well to combine. Cook for an additional 2-3 minutes until the steak is cooked through and everything is coated in the sauce. Season with salt and pepper to taste.
