2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon cinnamon

1/4 teaspoon salt

1 large egg, beaten

1/2 cup milk (dairy or plant-based)

1 teaspoon vanilla extract

1/2 cup chopped nuts (like walnuts or pecans) - optional

Vegetable oil or butter for frying

Powdered sugar, for dusting (optional)

Honey or maple syrup, for serving (optional)

Instructions
 

Prepare the Batter: In a mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir until just mixed.

    Add Wet Ingredients: To the dry mixture, add the beaten egg, milk, and vanilla extract. Stir gently until everything is well combined. If using, fold in the chopped nuts at this stage.

      Heat the Skillet: Place a large skillet on medium heat and add enough oil or butter to coat the bottom. Allow it to heat up for a couple of minutes.

        Cook the Fritters: Using a ladle or a large spoon, scoop spoonfuls of the batter into the hot skillet. Flatten them slightly with the back of the spoon to ensure even cooking.
