Southwest Ground Beef and Sweet Potato Skillet

1 lb ground beef (85% lean)

1 medium sweet potato, peeled and diced (about 1 cup)

1 bell pepper (red or green), diced

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

¼ cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Optional: Avocado slices and shredded cheese for topping

Instructions
 

Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Add the ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.

      Stir in diced sweet potatoes, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all flavors.

        Cover the skillet and reduce the heat to medium-low. Cook for about 8-10 minutes, stirring occasionally, until the sweet potatoes are tender.

          Once the sweet potatoes are tender, add the diced bell pepper, corn, and black beans. Stir everything together and cook for another 5 minutes, until heated through.

            Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh cilantro.

              Serve the skillet warm, with lime wedges and optional toppings like avocado slices and shredded cheese, if desired.
