Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

3 fresh jalapenos, seeds removed, finely chopped (adjust to taste)

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

1 cup diced tomatoes (canned or fresh)

1/2 cup chicken broth

1 lime, juiced

Fresh cilantro, for garnish

Instructions

Marinate the Chicken: In a bowl, combine the chopped chicken, lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Let it marinate for at least 30 minutes to enhance the flavors.

Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3-4 minutes until softened. Then, add the minced garlic and chopped jalapenos, cooking for another 2 minutes until fragrant.

Cook the Chicken: Add the marinated chicken to the skillet. Cook, stirring occasionally, until the chicken is browned and cooked through, about 8-10 minutes.

Add Tomatoes and Broth: Stir in the diced tomatoes and chicken broth. Bring the mixture to a simmer, allowing it to cook for an additional 5-7 minutes, letting the flavors meld together.

Serve: Taste and adjust seasoning if needed, then remove from heat. Serve hot, garnished with fresh cilantro over rice or in warm tortillas.
