2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

1 teaspoon dried oregano

Optional: 1/4 teaspoon red pepper flakes for heat

Optional: Sour cream or yogurt for dipping

Sauté the Spinach: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.

    Add the Spinach: Toss in the chopped spinach. Cook for about 2-3 minutes until the spinach has wilted. Season with salt, pepper, oregano, and red pepper flakes if using. Set aside.

      Mix the Cheese: In a bowl, combine the cooked spinach mixture with crumbled feta and shredded mozzarella. Mix well to combine.

        Prepare the Quesadillas: Place a tortilla in the skillet over medium heat. Spread about 1/4 of the spinach and cheese mixture on half of the tortilla, then fold it over.

          Cook the Quesadilla: Cook for 2-3 minutes on one side until golden brown, then carefully flip and cook for another 2-3 minutes until the other side is golden and the cheese is melted.

            Repeat: Remove from the skillet and keep warm. Repeat the process for the remaining tortillas and filling.

              Serve: Cut each quesadilla into wedges and serve warm with sour cream or yogurt for dipping.
