1 pound ribeye steak, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 large russet potatoes, peeled and cut into fries

2 cups shredded cheddar cheese

1/2 cup sour cream

1/4 cup fresh chives, chopped

4 large flour tortillas

1 cup mixed greens (optional)

Hot sauce (optional, for serving)

Prepare the Fries: Preheat your oven to 425°F (220°C). Toss the cut potatoes in olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet and bake for 30-35 minutes or until crispy and golden brown, turning halfway through.

    Cook the Steak: While the fries are baking, heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once hot, add the thinly sliced ribeye steak, garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the steak for about 3-5 minutes, until browned but still tender. Remove from heat and set aside.

      Assemble the Burritos: On a clean, flat surface, lay a flour tortilla. In the center, layer a portion of the cooked steak, a generous handful of crispy fries, and a sprinkle of shredded cheddar cheese. If using, add a handful of mixed greens and a dollop of sour cream.
