Ingredients

2 large red onions, thinly sliced

2 tablespoons sumac spice

3 tablespoons olive oil

1 teaspoon salt (to taste)

1 tablespoon apple cider vinegar

1 tablespoon fresh lemon juice

1 teaspoon honey (optional)

Fresh parsley, chopped, for garnish

Instructions

In a large mixing bowl, combine the thinly sliced red onions with a sprinkle of salt. Allow the onions to sit for about 10 minutes to release their juices and soften slightly.

In a small bowl, whisk together the olive oil, sumac, apple cider vinegar, lemon juice, and honey (if using). Adjust the seasoning with more salt to your taste.

Pour the prepared sumac dressing over the softened onions and toss gently to coat all the slices evenly.

Let the onions marinate for at least 30 minutes at room temperature. This will enhance the flavors as the sumac infuses into the onions.

When ready to serve, sprinkle the chopped parsley over the onions for a fresh touch.

Serve as a topping for grilled meats, in sandwiches, or as a vibrant side dish.
