Summer Corn and Zucchini Chowder

Ingredients
  

4 ears of fresh corn, husked and kernels removed

2 medium zucchinis, diced

1 large onion, diced

3 cloves garlic, minced

3 medium potatoes, peeled and cubed

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Chopped fresh cilantro or parsley for garnish (optional)

Juice of 1 lime

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the cubed potatoes, zucchini, smoked paprika, and thyme. Stir to combine and sauté for an additional 3-4 minutes.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and let it cook for about 15 minutes, or until the potatoes are tender.

          Add the fresh corn kernels and continue simmering for another 5 minutes.

            Stir in the heavy cream (or coconut milk) and lime juice. Season with salt and pepper to taste.

              If the chowder is too thick, feel free to add more broth or water until you reach your desired consistency.

                Remove from heat and let it cool slightly before serving. Garnish with freshly chopped cilantro or parsley if desired.
