1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 cups cooked jasmine rice

1 cup broccoli florets

1 red bell pepper, sliced

2 carrots, julienned

3 green onions, chopped

2 tbsp sesame oil

1 tbsp vegetable oil

¼ cup soy sauce

¼ cup mirin (sweet rice wine)

2 tbsp brown sugar

1 tbsp rice vinegar

1 clove garlic, minced

1 tsp grated ginger

Sesame seeds for garnish

Prepare the Teriyaki Sauce: In a small saucepan, combine soy sauce, mirin, brown sugar, rice vinegar, minced garlic, and grated ginger. Heat over medium heat until the sugar dissolves, about 2-3 minutes. Remove from heat and set aside.

    Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.

      Add Vegetables: Once the chicken is cooked, add the broccoli, red bell pepper, and carrots to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
