Tuscan Chicken Pasta Recipe

8 oz (225g) pasta (penne or fettuccine)

2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup baby spinach

1 cup heavy cream

1 cup Parmesan cheese, grated

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Stir in the baby spinach and let it wilt down.

        Make the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan cheese, mixing well until the cheese has melted and the sauce is creamy. If the sauce is too thick, you can add a bit of the reserved pasta water to reach your desired consistency.

          Combine Everything: Add the cooked pasta and sliced chicken to the skillet, tossing everything together to coat in the creamy sauce. Season with additional salt and pepper to taste.

            Serve: Divide the Tuscan chicken pasta between bowls. Garnish with fresh basil and additional Parmesan cheese if desired.
